Assyrtiko is generally considered to be one of the noblest of Greek white grape varieties. It achieves ripeness while maintaining high acidity. Citrus and mineral notes develop on the palate. It is an ideal accompaniment to seafood and roast poultry. Perfect with oysters and turkey.
In Santorini, the vines of Assyrtiko are pruned into the shape of low baskets called 'ambelies' to protect the grapes from the north east winds of summer - the 'meltemia'. A nightly sea mist provides moisture for the vines whose roots go deep down into the volcanic rock seeking out its mineral content. The result is the famous wine of Santorini.
